Oven Roasted Chicken

Ingredients:

  1. 2 roasting chickens (approximately 2½ pounds each)
  2. ½ teaspoon salt
  3. ½ teaspoon pepper
  1. ½ teaspoon of dried Rosemary
  2. 6 small red potatoes, halved
  3. 1 medium red onion, cut into 12 wedges

Directions:

Preheat oven to 400 degrees, and line a large roasting pan with nonstick foil.

Place the chicken on the foil and season with half of the salt, pepper and Rosemary. Place the roasting pan in the oven and roast the chicken for 25 minutes. Remove the pan and add the potatoes and onions. Sprinkle with the remaining salt, pepper and thyme and toss to coat with the drippings.

Return the pan to the oven and roast 35-45 minutes longer. Insert a meat thermometer into the thickest part of the thigh, not touching the bone, and remove the pan from the oven when the thermometer registers 170 degrees.

Place chicken on a cutting board; wait five minutes before carving. Arrange chicken slices on a platter with the roasted potatoes and onions and serve.
