Surf and Turf

Paired with Pinot Grigio

Description:

Porterhouse Steak with Gorgonzola Sauce
Served with Santa Margherita Chianti

Ingredients:

  1. 2 - 1 lb. pieces of Porter House Steaks
  2. 1 - 2 lbs of fresh Salmon Filet
  3. Dry rub for steak
  4. (to taste)
  5. salt
  6. pepper
  7. paprika
  8. onion powder
  9. garlic powder
  10. Gorgonzola sauce
  11. 2 table spoons of butter
  12. prosciutto to taste (1/4 cup)
  13. 1/4 cup of onions
  14. mixture of garlic and herb paste
  15. 1/2 cup of portable mushrooms
  16. 1/4 cup of brandy or cognac
  1. 2 tablespoons of whole grain mustard
  2. 1/4 cup of heavy cream
  3. 1/4 cup of gorgonzola cheese
  4. 1/4 cup of chicken stock
  5. 2 tablespoons of Worcestershire sauce
  6. 1/2 teaspoon of hot sauce
  7. Dill sour cream sauce
  8. butter
  9. sauteed onions and garlic mushroom
  10. mustard
  11. brandy
  12. cream
  13. worcester
  14. hot sauce
  15. chicken stock
  16. crumbled blue cheese

Directions:

Gorgonzola sauce
Melt butter , saute proguto, then onions until they wilt
add garlic and herb paste, and mushrooms until soft.
Take pan away from flame and add brandy. Mix the
ingredients until gorgonzola has blended into the sauce.
Place in bowl.

Grill Steaks
Oil pan
sear steaks for 21/2 - 3 minutes per side. Allow to rest for 3-5 minutes.
Serve with gorgonzola sauce on top to taste

Grilled Salmon
Oil pan
Grill filet skin side down and then turn over (4-6 minutes total - to taste)

Dill sour cream sauce
Mix ingredients
1/2 cup of sour cream
1/4 cup of scallions
2 teaspoons of fresh lemon juice
1/4 cup of capers
2 tablespoons of fresh dill
