Trout Baked in Salt Crust
Paired with Pinot Grigio
Description:
Delicious simple dramatic presentation of whole fish, perfect for a summer night.
Ingredients:
- 1 whole trout
- 2 cups kosher salt
- 1 egg white
- lemon slices
- fresh herbs
- olive oil
Directions:
wash and pat dry fish.
in a large bowl combine 2 cups kosher salt and egg white, mix with hand to create a wet sand like consistancy, adding more water if needed.
on a baking sheet create a "bed of salt" place the whole fish on it. Fill the cavity with lemon slices and fresh herbs.
cover top of fish with salt mixture encapsulating fish entirely.
bake fish in over for approximately 30 minutes or until salt begins to brown slightly.
using back of knife or mallet break salt crust and remove flesh of fish.
finish with sprinkle of olive oil, additional fresh herbs and squirt of lemon juice.
