    The Prosecco had a distinct fruit-forward flavor with a well-balanced acity. Pairing it with the Peach Beignet just further brought out it's complex floral flavors with a hint of citrus. Splendid!

Peach Beignet and Prosecco Zabaione

Paired with Prosecco

Description:

A sweet treat that can be enjoyed in summer when peaches are in season.

Ingredients:

  1. 1 cup lukewarm water
  2. 1/4 cup sugar
  3. 1/2 teaspoon salt
  4. 1 egg, room temperature and beaten
  5. 2 tablespoons butter, softened
  6. 1/2 cup evaporated milk
  7. 4 cups bread flour or all-purpose flour
  8. 3 teaspoons instant active dry yeast
  9. Vegetable oil*
  1. 1oz corn starch
  2. Powdered sugar for dusting
  3. 1/2 peach (white or yellow) small diced
  4. 1/2 peach thinly sliced
  5. 1 egg yolk
  6. 35 g caster sugar
  7. 3 tablespoons Santa Margherita Prosecco
  8. 1 pinch flour

Directions:

Mix water, sugar, salt, egg, butter, evaporated milk, flour, and yeast in the bowl

Beat until smooth
place in a lightly greased bowl, cover with plastic wrap and chill for 10minutes

Roll out dough evenly

Cut peach into small dice (1/2in x 1/2in x 1/2in)

Coat in corn starch and place in middle of flatten dough

Fold into square

Cut into a rhombus

In a deep fryer or large pot, heat vegetable oil to 360 degrees F

Fry for 2 to 3 minutes or until golden brown on both sides

Generously add powdered sugar

1 egg yolk and 35 g caster sugar in a mixing bowl
Beat until white
Add 3 tablespoons Santa Margherita Prosecco and 1 pinch flour, mix

.With an electric whisk or hand whisk, beat well until mixture is a thick foam.
Dust half of the serving plate with powdered sugar, place beignets over it.
Section off half the plate with peach slices
Add zabaione on other side
