Artichoke and Goat Cheese Stuffed Raviolis in a Creamy Citrus Mushroom Ragout

Paired with Chianti Classico Riserva

Description:

Recipe that I was inspired to make for my boyfriend on this past Valentines Day.

Ingredients:

  1. RAVIOLIS-
  2. 48 Wanton Wrappers
  3. Two 8 oz jars of Marinated Artichoke Hearts (Diced)
  4. 16 oz of goat cheese
  5. 8 cloves of garlic (minced)
  6. 2/3 cup of whole milk Ricotta cheese
  7. two egg yolks (put the egg whites into a separate bowl to the side add a tblspn of water and mix, will use for sealing the edges of the raviolis)
  8. salt and pepper to taste
  9. RAGOUT-
  1. 16 oz baby portabella mushrooms (chopped roughly)
  2. 16oz of shitake mushrooms (chopped roughly)
  3. 1/3 cup of fresh basil (finely chopped)
  4. 5 tblsp butter
  5. 3 shallots (chopped fine)
  6. juice of one lemon
  7. 2 cups of half and half or whipping cream
  8. 1/3 cup grated parmesan/romano cheese, and extra to sprinkle as the finishing touch to the meal.

Directions:

Mix your goat cheese, ricotta,4 cloves of minced garlic,artichoke hearts, 2 egg yolks, and salt and pepper to taste.

Bring large pot of water to boil, and fill your raviolis.

Add about a teaspoon of your filling to the wanton and fold.

Place each ravioli onto a cookie sheet that has been lightly oiled.Start placing them into a pot of lightly salted boiling water. Once they float to the top, place onto serving dish.

In large saucepan. Melt butter over medium heat. Add your shallots and garlic. Sweat for few minutes.

Add all of your mushrooms, the basil, lemon, salt and pepper to taste. Mix and cover for 3-5 minutes.

Add your cream and mix.

Add parmesan, stir. Leave uncovered, simmering over low heat for about 5-10 minutes.

Plate your raviolis and ladle the sauce evenly over them.

Sprinkle the top with your extra shavings of cheese.
