Feta and Garlic Shrimp

Paired with Pinot Grigio

Description:

A simple but delicious recipe for on the go parents these days. Made with a bit of wine for that extra finishing touch.

Ingredients:

  1. 12 oz. Shrimp
  2. 1/3 cup of butter
  3. 2 tbs Extra Virgin Olive oil
  4. 1 tsp Garlic (pressed)
  5. 6 tsp chopped parsley
  6. 2 oz crumpled feta cheese
  1. 1/4 cup seasoned bread crumbs
  2. 2 tbs Santa Margherita Pinot grigio
  3. 1 tsp lemon juice
  4. 1/2 tsp salt
  5. pepper to taste
  6. Served over 4 cups of steamed white rice

Directions:

In shallow microwaveable dish place butter and garlic. Heat in microwave on high for 1-2 minutes until garlic is browned and fragrant. Add to the dish the parsley, olive oil, Feta, bread crumbs, wine, and lemon juice. Mix well and spread evenly on the dish. Top with the shrimp (tail facing inwards) and poon some of the mixture so that it coats the shrimp. Cook in microwave 3-5 minutes until shrimp is pink and done. Cover with paper towel if splattering occurs. Remove from heat and let stand 2 minutes. Serve over white rice with lemon wedges and a chilled Santa Margherita Pinot Grigio!
