Kathy's Boneless Chicken Breasts

Paired with Chianti Classico Riserva

Description:

Chicken Breasts with Soy & Sherry Marinade and bread crumb topping

Ingredients:

  1. -6 Boneless, skinless Chicken Breast halves
  2. Breading:
  3. -1 cup fresh breadcrumbs
  4. -2 TBS unsalted butter, melted
  5. -1/2 tsp black pepper
  6. Soy and Sherry Marinade:
  1. -1/2 cup soy sauce
  2. -1/2 cup dry sherry
  3. -2 TBS Dijon mustard
  4. -1 TBS hot red pepper sauce
  5. -1/4 cup vegetable oil

Directions:

Whisk together the marinade ingredients. Marinade the chicken for at least 2-3 hours (in refrigerator).

Chicken:
Arrange the marinaded checken breasts in a baking dish in 1 layer.
Preheat oven to 375 degrees.
Mix with fork: the breadcrumbs, butter and black pepper.
Drain and discard any excess marinade form the chicken, leaving the breasts on the dish. Spoon the breadcrumb mixture on top of the chicken and bake uncovered until the chicken and the crumbs are browned and the chicken is cooked.
