Gourmet Garlic Bianca Pizza with Crispy Bacon, Sundried Tomatoes and Caramelized Onions

Paired with Chianti Classico Riserva

Description:

This pizza combination of salty bacon and rich cheeses baked with savory onions and sundried tomatoes is just pure heaven.

Ingredients:

  1. 1 fresh store bought ball of pizza dough
  2. ½ large onion or 1 small onion
  3. 2 cups of shredded mozzarella cheese
  4. 1 8 oz. container of ricotta cheese
  5. 1 jar of oil-packed sundried tomatoes
  1. 4 strips of thick cut bacon
  2. 2 cloves of minced garlic
  3. Canola oil
  4. Flour

Directions:

Pour ½ cup of oil in microwave-safe bowl, mince garlic cloves and add to the oil. Heat oil and garlic in the microwave for 2 minutes.
Chop onion into thin slices. Heat skillet over low heat. Pour 3 tablespoons of oil into the skillet. Add onions to skillet and cook on low heat for 15 to 20 minutes until soft and caramelized. Chop bacon and cook in skillet for 4 or 5 minutes over medium heat.
Spread a small handful of flour to a cutting board or countertop. Place dough on floured surface and roll out into a 12 to 14 inch circle.
Spread garlic oil on pizza dough. Spread mozzarella cheese over dough. Add large spoonfuls of ricotta cheese on top of mozzarella. Add sundried tomatoes, caramelized onions and bacon.
Bake in 400 degree oven for 15 minutes.
