    Belisimo!!!! My favorite pairing is with Santa Margharita Chianti. However, I can't wait to try Pasta Ala Fazio with Pinot Grigio!

    I tried your Pasta Ala Fazio twice. Once with Santa Margharita and once without. Although they were both excellent the one with the wine you used in the video was better.

    I tried Fred's recipe this weekend. It was so easy to make. My friends and family really enjoyed it. Bravo to the chef. Santa Margherita Pinot Grigio was a great choice for this dish.

Pasta Ala Fazio

Paired with Pinot Grigio

Description:

Easy to make with great taste.
Breaded chicken cutlets with alfredo sauce and prosciutto on a bed of angel hair pasta with pesto sauce, then covered with pinot grigio infused arugula

Ingredients:

  1. EASY METHOD USING STORE BOUGHT ITEMS
  2. 4 chicken cutlets
  3. 1lb of angel hair pasta
  4. 1/3lb prosciutto
  5. alfredo sauce
  6. pesto sauce
  7. baby arugula
  1. pinot grigio wine
  2. garlic
  3. olive oil
  4. salt & paper
  5. 1 egg
  6. seasoned bread crumbs

Directions:

Serving for 4.

4 chicken cutlets pounded flat, dipped in battered egg and then dredged in seasoned bread crumbs, set aside.

Boil 4 qts of water for pasta.

While water boils, lightly fry cutlets in olive oil and garlic.

Cook pasta for apprx. 4 mins for al dente.

When cutlets are part cooked, cover each one with a generous amount of alfredo sauce, then cover with prosciutto. cover pan and let simmer on low.

When pasta is cooked, transfer to bowl and then mix in pesto sauce and a small amount of alfredo sauce.

Prepare arugula in a bowl of iced water and then blanch for a minute or two. Dry arugula and then place in frying pan, add 1/2 cup of Pinot grigio and cook for one minute only.

Add cutlets on top of pasta, and then add arugula on top of cutlet.

Pour generous amount of chilled Santa Margherita to glass and enjoy dinner.
