Country ham and sage quiche in a pine nut cracker crust

Paired with Pinot Grigio

Description:

A savory quiche to be enjoyed at breakfast, lunch or dinner. Fresh sage brings out the buttery flavor of the pork and gruyere center. A classic cracker crust with pine nuts adds an elegant finish.

Ingredients:

  1. CRUST:
  2. 2 cups butter crackers
  3. 1/2 cup toasted pine nuts
  4. 1/2 cup walnut oil
  5. FILLING:
  6. 4 eggs, slightly beaten
  1. 1 cup half-and-half
  2. 1 cup finely chopped country ham
  3. 1 tbs. fresh chopped sage
  4. 1/2 cup shredded gruyere cheese
  5. 1/2 teaspoon ground black pepper
  6. 1/8 teaspoon sea salt

Directions:

Crust:
Preheat the oven to 350 degrees. In a food processor, combine toasted pine nuts, crackers, and walnut oil until mixture resembles coarse crumbs. Press into a 9-inch pie plate. Bake at 350 for 10 minutes. Set aside.

In a medium bowl, whisk eggs and half-and-half together. Stir in the sage, ham, cheese, salt and pepper. Pour the mixture into the piecrust, spreading out the cheese and ham evenly. Bake at 350 degrees for 40 to 50 minutes, until knife inserted in the center comes out clean. Let stand 10 minutes before serving.
