Sparkling Mediterranean Shrimp

Paired with Prosecco

Description:

A cosmic combination of shrimp and the rich and salty flavors of the Mediterranean with proscuitto & olives.

Ingredients:

  1. 20 Shrimp(31-40)
  2. 1T olive oil
  3. 5T unsalted butter divided
  4. 4 sun dried tomatoes in olive oil sliced in strips
  5. 1/4 cup Kalamata olives sliced (about 9)
  1. 2 cloves minced garlic
  2. 4 slices prosciutto sliced in 1/4 strips
  3. 3T feta crumbled cheese
  4. 1 lime
  5. fresh ground pepper

Directions:

Over medium heat add 1T olive oil then 4T butter, when melted add garlic for 30 sec then sun dried tomatoes for 1 min.Add olives for 1 min, then shrimp for about 2 min. add prosciutto and turn shrimp, Add 2T of feta cheese and a squeeze of lime. Swirl in last T of butter then after 1 or 2 min. min. turn off heat. Add another squeeze of lime and fresh pepper. Plate 5 shrimp and garnish with Feta cheese.
