Pasta Fresca

Paired with Pinot Grigio

Description:

Fresh-from-the-garden flavors and simple preparation describe Pasta Fresca. Use the freshest ingredients possible and cook mushrooms until dry enough to give them a chewy texture and meaty flavor.

Ingredients:

  1. 1# Angel hair pasta
  2. 2 cups Crimini Mushrooms
  3. 1 cup Baby Spinach
  4. 1 cup Grape Tomatoes
  5. 4 Scallions
  6. 2 Tbs Italian Parsley
  1. Dried Italian Basil
  2. Garlic Powder
  3. Salt
  4. Pepper
  5. Extra Virgin Olive Oil
  6. Parmigiano Reggiano

Directions:

Thinly slice mushrooms length-wise, halve tomatoes through poles, slice scallions using a diagonal cut.
Chiffonade spinach leaves into about 1/2" strips.
Layer mushrooms onto a platter, season with garlic, salt, pepper and basil, then microwave until partially dried, about 6 minutes.
Layer onions onto mushrooms, season as before and microwave for 1-2 minutes.
Layer spinach atop mushrooms and onions, season and microwave 1-2 minutes.
Layer tomatoes onto platter, season again and microwave for 1-2 minutes. Drizzle mixture with extra virgin olive oil.
Prepare angel hair pasta according to package directions, about 3-4 minutes for ‘al dente’.
Place pasta in serving bowl or plate, top with vegetable mixture, drizzle with olive oil, garnish with chopped parsley and parmigiano reggiano.
