    What makes this dish special is it appeals to most palets easy on the pocketbook & combining FRESH basil is the dif. Tried with/without cornstarch; personal pref with. Nice job.

    corn starch works well.The sauce holds to the chicken nicely and imparts no undesirable flavor.A runny puddle surrounding a nicely done chicken breast is not appealing and so avoided.

Chicken with Lemon and Basil

Paired with Pinot Grigio

Description:

A simple and versatile dish with a flavorful, tangy sauce. This recipe can be easily multiplied for a large crowd.

Ingredients:

  1. 4 boneless, skinless chicken breast halves (6 to 8 oz ea, trimmed of fat, tenderloins removed (if attached), sliced horizontally. Pound lightly to even out thickness of the pieces.
  2. Salt and pepper
  3. 4 tablespoons unsalted butter, divided
  4. 3 tablespoons olive oil, divided
  5. 1 small shallot, minced
  6. 1 large clove garlic, minced or pressed
  1. 1 tbs cornstarch
  2. 1 1/2 cup chicken broth, divided
  3. 1/2 cup white wine
  4. 1/3 cup lemon juice (from 2 large lemons), plus slices for garnish
  5. 2 tbs capers (optional)
  6. 2 tablespoons minced fresh basil, reserve several whole leaves for garnish

Directions:

Season chicken with salt and pepper.

Heat 1 tbs butter and 1 tbs olive oil in 12 in. skillet over med high until butter is foamy. Saute 3 to 4 chicken pieces at a time, 1 1/2 to 3 min. Turn chicken and cook on second side, 1 to 1 1/2 min. Transfer chicken to dish, Keep warm. Repeat with the remaining chicken pieces. Wipe skillet with a paper towel when done.

Add 1 tbs butter to pan, return to stove. Heat over med high heat until foaming. To the skillet add the shallot and garlic. Saute until soft. Mix cornstarch with 1/2 cup of chicken broth until smooth. Add to skillet. Stir until bubbly and slightly thick. Stir in wine, lemon juice and remaining cup chicken broth. Cook over med high heat until bubbling, stirring occasionally. Cook until reduced by 1/3, add minced basil and remaining tbs of butter, stir. Remove from heat.

Arrange chicken on a serving platter. Pour sauce over chicken. Sprinkle with capers (if using), garnish with fresh basil and lemon slices.
