Sal's Sicilian Cioppino
Paired with Pinot Grigio
Description:
The beauty of the sea is bathed in marinara sauce and paired with Santa Margherita Pinot Grigio wine.
Ingredients:
- 28 oz. diced tomatoes
- 1/2 c. chopped onion
- 2 cloves chopped garlic
- 3-4 bay leaves
- Pinch of salt
- Pinch of oregano
- Pinch of sugar
- 2T. Olive Oil
- 1t. lemon juice
- 8 whole clams in shell, rinsed
- 1 lb. swordfish, remove skin
- 1 lb. cod, rinsed and quartered
- 16 jumbo shrimp, remove shell and devein (can leave tails intact)
- 1/2 c. chicken broth
- 1 T. red wine vinegar
- Lemon slices
Directions:
Marinara Sauce:
28 oz. diced tomatoes
1/2 c. chopped onion
2 cloves chopped garlic
3-4 bay leaves
Pinch of salt, oregano & sugar
Combine in large pan & simmer 20 min.
Once marinara sauce is on the stove, prepare seafood.
Seafood:
2T. Olive Oil
1t. lemon juice
8 whole clams in shell, rinsed
1 lb. swordfish, de-skin
1 lb. cod, rinse & quarter
16 jumbo shrimp, remove shell and devein
1/2 c. chicken broth
1 T. red wine vinegar
Lemon slices
In large pan, sauté swordfish & cod in olive oil. Add shrimp & clams. Next, add other ingredients except lemon slices. Gently add marinara sauce & heat over medium flame. Once simmering again, continue cooking for 15-20 minutes. Remove from heat and plate, making sure most of the clams are positioned on the top of the dish. Garnish with lemon.
Note: Marinara sauce can be prepared a day early. Refrigerate until ready to prepare seafood.

Oh what a treat, I've tasted this dish at Sal's, it is wonderful. Too bad the video can't capture the smell, too. Sal's right this SM Pinot Grigio is the perfect companion for his dish!

Sal has a good vidio presentation, but his Cioppino does not have much variety in it. Also the broth should be made out of fish stock, not chicken.
